Whole30 Turkey Shell Tacos

If you're on Whole30 or Paleo, or just looking for low card options, these turkey shell tacos (created by our friend and dietician Olivia C.) are delicious. You can add your favorite fillings or try our egg & veggie version.


Makes 2 servings

  • 4 Turkey slices
  • 2 eggs
  • 2 Tbsp coconut oil
  • 1 cup of zucchini (chopped)
  • 1 cup of yellow squash (chopped)
  • 1/2 cup of button mushrooms (sliced)
  • 1 cup cauliflower rice
  • 2 Tbsp of nutritional yeast
  • Salt & pepper to taste
  • Your favorite hot sauce


  1. Turn on broiler.
  2. Fold 2 turkey slices in half, forming a taco shape.
  3. Place the slices inside a small loaf pan, so that the turkey slices are still in a taco or tostada like shape. If needed, you can use a toothpick or skewer to hold the shape and bake on a sheet pan.
  4. Broil the turkey slices until slightly golden brown and crispy (around 5 mins).
  5. While the turkey slices are getting crispy, sauté the zucchini, yellow squash, mushrooms and cauliflower rice in a heated pan in coconut oil.
  6. Once the veggies are sautéed, add beaten eggs and cook until scrambled.
  7. Add the mixture to your turkey taco shells. Sprinkle the nutritional yeast and your favorite hot sauce and enjoy!
