Organic Sweet Italian Chicken Sausage Product Packaging Purchase from True Story


  • 1/2 yellow onion, diced
  • 1 package of True Story Sweet Italian Sausage, diced
  • 1/2 Tbl Olive Oil
  • 2 cups packed spinach
  • 10 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/2 tea sea salt
  • Fresh ground pepper to taste
  • 1/2 cup minced chives
  • 1/2 tea smoked paprika (optional)


  1. Preheat oven to 350
  2. Sauté onions and sausage over high heat with olive oil until beginning to brown.
  3. Reduce heat to medium, add spinach and cook stirring frequently until all liquid from spinach has been cooked off. Remove from heat and set aside until cooled slightly.
  4. Mix remaining ingredients thoroughly in a separate bowl. Set aside to cool.
  5. Spray muffin tins with non-stick cooking spray
  6. Once cooled add the sautéed mixture to eggs.
  7. Pour mixture into the muffin tin evenly.
  8. Place in center rack of the oven and cook for approx. 22min. Look for the center of the muffins to be just set and the edges to brown slightly.
  9. Pull muffin tin from over and allow them to cool slightly.
  10. Eat right away, or allow them to cool completely and store in an airtight container or bag in your refrigerator for up to a week. Simply reheat quickly in the microwave for a quick breakfast on the run.
