  • 9 tbsp butter
  • 1 package True Story Sweet Italian Chicken Sausage, sliced
  • 1 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 butternut squash, cubed
  • ½ red pepper
  • 2 ½ cups organic chicken broth
  • 1 tsp salt
  • 1 tsp pepper
  • I small package tortellini of choice


  1. Take squash, peel, remove seeds and chop into cubes.
  2. In a large pot over medium heat, heat oil and garlic.
  3. Next, add butternut squash and red pepper. Add chicken broth until covering all the vegetables (add water if needed). Bring to a boil then reduce heat to low.
  4. Cover and simmer until squash is softened. With a slotted spoon, transfer vegetables to a food processor and reserve 1 cup of the broth. Pulse veggies until smooth. Slowly pour in broth until you reach a soup-like consistency but still thick.
  5. Next, add your soup back into the pot and add your sliced sausage. Bring a boil on low heat cover and heat.
  6. Cook tortellini in a separate pot of boiling water until al dente. Drain and add to soup.
  7. Sprinkle with salt and pepper.
