Organic Sweet Italian Chicken Sausage Product Packaging Purchase from True Story

Ingredients

  • 3 True Story Sweet Italian Sausage links
  • 2 large russet potatoes peeled and shredded
  • 2 tbsp avocado oil
  • salt and pepper
  • 2 cups spinach
  • ½ cup brown button mushrooms (sliced)
  • ½ cup of yellow onion (chopped)
  • 10 large eggs
  • 1/2 cup unsweetened almond milk

Directions

  1. Preheat the oven to 450 degrees. Lightly grease a 9×13 inch pan. Use shredded potatoes to create a layer on the bottom of the dish. Sprinkle with salt and pepper.
  2. Place in the oven and bake for 25-30 minutes, until the potatoes are crispy.
  3. While potatoes bake, brown the sausage in a large frying pan. Set aside.
  4. Add a little more oil to pan and sauté onions and mushrooms, about five minutes. Add spinach and cook until soft.
  5. When potatoes are ready, remove from oven. Lower the temperature to 350. Top the potatoes with sausage, and sausage mix.
  6. In a large bowl, whisk together eggs and almond milk really well. Pour over the top of the casserole.
  7. Bake for another 30-40 minutes or until the center is set. Remove from oven and let sit for 10 minutes before cutting and serving.
