Ingredients

 

  • 6 slices True Story Bacon strips
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups buttermilk
  • 1/3 cup melted butter
  • 2 eggs, lightly beaten
  • syrup, for serving

 

Directions

  1. Preheat oven to 375F.
  2. Line a baking sheet with foil and add bacon strips. Bake for 15 minutes or until starting to turn crispy. Remove from oven and allow to drain on a plate lined with paper towels.
  3. Meanwhile, mix the waffle batter. Add flour, sugar, baking powder, baking soda, and salt into a bowl and whisk together.
  4. In a separate bowl, mix buttermilk and melted butter.
  5. Whisk in eggs and combine the wet ingredients to the dry ingredients. Mix well until there are no lumps. Cut half the bacon into bits and add to batter.
  6. Add to a heated waffle iron sprayed with nonstick spray. Remove from waffle iron and let cool.
  7. Top with extra bacon, butter, and syrup!
