Fiesta Chicken Salad

Ingredients

• 1 package of True Story Thick Carved Chicken (cut into cubes)
• 1 avocado
• 1 red bell pepper diced
• 1/2 tbsp of mayonnaise (for Whole30, eliminate or use Whole30 approved mayonnaise)
• 1/4 cup fresh cilantro roughly chopped
• 2 scallions thinly sliced (or 2 tablespoons finely diced red onion)
• juice of one lime
• 1/4 teaspoon cumin
• 1/4 teaspoon smoked paprika
• 1 pinch cayenne pepper
• kosher salt to taste
• black pepper to taste

Directions

1. Mash the avocado in a medium bowl with a fork.
2. Mix the remaining ingredients together with the avocado.
3. Serve on a bed of lettuce, on whole grain bread, served with crackers or tortilla chips, or eat right out of the bowl!
