Ingredients

Chilaquiles

  • 1 package True Story Sweet Italian Chicken Sausage, sliced
  • 2 tbsp avocado oil oil
  • ½ yellow onion, diced
  • 2 sweet potatoes
  • 1 10 oz can red enchilada sauce (make your own or use a Whole30-compliant brand)
  • 3 eggs, cooked sunny side up
  • 1 avocado, sliced
  • 1 jalapeno, sliced
  • 1 radish, sliced thin
  • Fresh Cilantro
  • Lime wedges

Directions

  1. Preheat oven to 375 degrees.
  2. Place peeled and sliced sweet potatoes in a large bowl and toss sweet potatoes with 2 Tbsp of avocado oil and sea salt.
  3. Place sweet potato chips in a single layer on baking sheet covered with parchment paper. Bake in the oven for 10 minutes, then flip the chips over and bake for another 10 minutes
  4. Set aside to cool and turn oven down to 350.
  5. In a large cast iron skillet, heat oil over medium heat. Add onion and cook until soft.
  6. Add onions and sweet potato chips into a large bowl. Add in the enchilada sauce and toss until well coated. Return entire mixture to cast iron skillet.
  7. Crack three eggs on top of mixture and add sausage.
  8. Place cast iron skillet into the oven and bake in the oven until the eggs whites are cooked, about 8-10 minutes.
  9. Remove from oven and garnish with jalapeno, avocado, radish, cilantro and lime.
  10. Serve warm and enjoy!
