This Prosciutto Melon Salad is the perfect, no-cook recipe to compliment your summer barbecue spread. Just allow 30 minutes for the homemade basil cider vinaigrette to meld. Recipe by Rob and Haley Wall of @walleats.
Melon Salad Ingredients
2 cups watermelon balls
2 cups cantaloupe balls
2 cups honey dew balls
8 oz fresh mozzarella, cherry size
1/2 cucumber, thinly sliced with mandoline
1 pack True Story Heritage Breed Prosciutto, shredded
1/4 medium red onion, thinly sliced
1/3 cup pistachios, crushed
Garnish: fresh basil
Basil Cider Vinaigrette Ingredients
1/4 cup olive oil
1 tbsp apple cider vinegar
3 tsp honey
1/2 tsp Dijon mustard
1 tsp lime juice, fresh squeezed
2 tbsp fresh basil, finely chopped
1/2 tsp Italian seasoning
Pinch salt and pepper
Directions
Prepare the Basil Cider Vinaigrette: Combine olive oil, apple cider vinegar, honey, Dijon mustard, lime juice, fresh basil, Italian seasoning, salt and pepper to a glass and mix well.
Set aside and allow at least 30 minutes for ingredients to come together.
Prepare the melon salad by adding watermelon, cantaloupe, honey dew, and mozzarella to a large bowl and mix well.
Add cucumber, True Story Heritage Breed Prosciutto, red onion, pistachios, and fresh basil.
Mix Basil Cider Vinaigrette and pour over melon salad just prior to serving. Enjoy!
