Organic Uncured Applewood Smoked Ham Product Packaging

Ingredients

  • One Half (medium sized) Onion
  • 12 oz. (Two Packages) True Story Organic Uncured Applewood Smoked Ham
  • 1/3 cup White Wine (room temperature)
  • 1/3 cup cream cheese (or 2/3 cup regular cream if preferred)
  • 3 oz. Finely Ground Pistachios
  • Parmigiano Reggiano
  • 1 lb. Short Pasta
  • Extra Virgin Olive Oil

Directions

  1. Boil liberally salted water in a large pot for pasta.
  2. Dice Onions and saute on medium heat in large saucepan until transparent.
  3. Dice ham into small slices and add to onions.
  4. Raise heat slightly and cook for several minutes, until ham is lightly browned and most water has cooked off.
  5. Add white wine and cook on high heat until alcohol aroma is gone.
  6. Add cream cheese and 1 cup hot water from pasta pot (enough to keep it wet). Break up cream cheese with cooking spoon and let water evaporate until you get a uniform creamy consistency; add more pasta cooking water as needed.
  7. Drain the pasta al dente and add to sauce.
  8. Toss pasta with sauce, pistachios and a few tablespoons of olive oil; plate and add Parmigiano as desired.
