These hash brown egg nests topped with shredded cheddar and our Vermont Maple Syrup Breakfast Sausage make the perfect grab-and-go breakfast or brunch.
6 cups russet potatoes, shredded
6-8 eggs
1/2 tsp salt
1/4 tsp black pepper
1 cup grated cheddar cheese
2-3 True Story Foods Vermont Maple Syrup Breakfast Sausages, choppedAvocado oil spray
Garnish: chopped parsley
Directions
Preheat oven to 400 degrees.
Add shredded potatoes to a large bowl of ice water and soak for at least 15 minutes.
Remove potatoes, squeeze and pat dry to fully remove all moisture.
Spray 12-cup muffin tin with avocado oil and add ½ cup of shredded potatoes to each muffin cup. Carefully press down middle and form edges to make nest.
Place in oven and bake 20 minutes (re-spray tops with avocado oil at 10 min).
Remove from oven and reduce temperature to 350 degrees.
Whisk eggs, salt, and pepper in a bowl.
Pour scrambled egg mixture into each hash brown nest.
Bake until eggs are cooked (additional 20 minutes).
Remove from oven and top with cheddar cheese, True Story Foods Vermont Maple Syrup Breakfast Sausage, salt and pepper to taste, and parsley to garnish.
