Sausage & Pepper Pasta Salad

Ingredients

• 1/4 cup avocado oil (or canola oil)
• 1/4 cup olive oil
• 1/4 cup red wine vinegar
• 1 clove crushed garlic
• 1 Tbsp Dijon mustard
• 1/2 Tbsp dried oregano
• 1/2 tsp salt
• Freshly cracked pepper
• 1 lb penne (or pasta of your choice)
• 4 True Story Sweet Italian Sausages, sliced
• 4 oz fresh mozzarella, cubed
• 1 red bell pepper, sliced
• 1 cup button mushrooms, sliced
• 1.5 oz. arugula

Directions

1. Prepare the dressing by combining all the ingredients in a blender and whizzing until the garlic is minced and the dressing is thick and creamy.
2. Bring a large pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until the pasta is al dente. Drain in a colander and set aside to cool.
3. While the pasta is cooling, add the sliced sausage to a non-stick skillet and cook over medium-low heat until brown on both sides. Set aside.
4. Add the cooled pasta to a large bowl along with the arugula, sliced peppers, mushrooms, cheese cubes, and cooked sausage. Pour the dressing over top, then toss to coat. Serve immediately. If eating later, refrigerate pasta and add dressing before eating.
