Rustic Sausage and Lentils

Our take on this classic dish is full of flavor and perfect for a cold winter night. Traditionally made with mild pork sausage, you can change it up by using our True Story Bratwurst as well.


Makes 4 servings

  • 1 tbsp Olive oil Four True Story Mild Pork Sausages (Or substitute True Story Bratwursts)
  • 1 onion (chopped)
  • 1 carrot (chopped)
  • 1 garlic clove (minced)
  • 1 bay leaf
  • 2 sprigs of fresh rosemary
  • 1 can of lentils
  • 2 cups of vegetable stock
  • 1 can (16oz) of diced tomatoes,
  • 3 tbsp parsley, chopped
  • salt and pepper to taste


  1. Heat oil in a skillet over medium heat and fry sausages for 8-10 minutes or until golden. Remove sausages from the pan and set aside on a paper towel.
  2. Add onion, carrot and garlic to the pan and fry for 3-4 minutes until onions are softened and lightly browned. Return sausages to the pan, then add the bay leaf, rosemary, lentils, stock and tomatoes. Bring it all to the boil, then reduce the heat to low and leave to simmer gently, covered, for about 40 minutes or until lentils are tender.
  3. If you feel it needs more liquid, just add a little water or leftover vegetable stock.
  4. Remove the bay leaf and rosemary and season with salt and pepper to taste.
  5. Sprinkle some freshly chopped parsley on top and enjoy.
