Celebrate spooky season with these chocolate pumpkin cookies made with a savory bacon surprise. They’ll disappear freakily fast, but don’t be scared—they can even be made sugar free.
1 1/2 cups gluten-free all purpose flour
1 tsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 cup granulated monk fruit
2 tsp vanilla extract
1/3 cup of almond butter
3 slices cooked True Story Foods Bacon
1/2 cup pumpkin puree
3 tsp black charcoal (or food coloring)
1/4 cup chocolate chips (sugar-free if desired)
1/4 cup chopped roasted pecans
Directions
Preheat oven at 350F.
Cook the bacon as desired—pan fry, bake, or air fry for 12 minutes at 320F.
Mix the dry ingredients for the cookies.
Chop the bacon.
Add the rest ingredients and mix until fully incorporated.
Mix in part of the chocolate chips and pecans (leave some for topping).
Create 6 large cookies and top with leftover chocolate chips and pecans.
Bake for 11 minutes (for chewy inside!). Let them cool down and enjoy!
