Savory breakfast lovers, rejoice: This hearty oatmeal power bowl is packed with protein and veggies to help you start your day off right. Oatmeal and toppings can also be prepped in advance for easy assembly on busy mornings.
1 cup old-fashioned rolled oats
2 cups chicken broth
½ cup sharp cheddar cheese, shredded
4 slices True Story Foods Kurobuta Bacon
2 True Story Vermont Maple Breakfast Sausages
1 medium sweet potato, peeled and diced into 1-inch cubes
1 bunch dino kale, stems removed, leaves chopped
1 tsp apple cider vinegar
4 eggs
Toppings
½ avocado, sliced thin
2 tbsp crème fraîche
2 tsp chili crisp oil
2 scallions, sliced thin
Olive oil, salt, pepper
Directions
Preheat oven to 425°F (220°C). Toss diced sweet potato with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until caramelized and tender.
Meanwhile, cook proteins: In a skillet over medium heat, cook bacon until crisp. Remove and set on paper towels. In the same skillet, add sausages. Cook until browned and cooked through, about 8–10 minutes, turning occasionally.
Sauté the kale: using the same skillet with bacon fat, add chopped kale. Sauté for 2 minutes until wilted, then add ¼ cup water. Simmer until tender, about 5 minutes. Finish with a splash of apple cider vinegar, season with salt, and set aside.
Make the oatmeal base: In a saucepan, bring chicken broth to a boil. Add oats, reduce heat, and cook until creamy (about 5 minutes). Stir in shredded cheddar cheese until melted and smooth. Adjust seasoning to taste.
Soft boil eggs: Bring a small pot of water to a boil. Gently lower in eggs and cook for 6½–7 minutes. Transfer to an ice bath for 2 minutes, then peel carefully. Slice in half.
Assemble bowls: Divide oatmeal between two bowls. Top each with 2 slices bacon, 1 sausage, 2 soft-boiled egg halves, roasted sweet potato chunks, and sautéed kale.
Garnish with avocado slices, a dollop of crème fraîche, a drizzle of chili crisp oil, and sprinkle of scallions, and black pepper to taste
