Paleo Sweet Potato and Sausage Stuffing

Our Paleo stuffing is so delicious, you're friends and family won't miss the carbs! The fresh herbs work beautifully with the sweet potatoes and sausage making it a year-round favorite.


Makes 6 servings

  • 3 Organic True Story Sweet Italian Sausages (chopped)
  • 1 red pepper(diced)
  • 1 green pepper (diced)
  • 8 sprigs of thyme
  • 2 stalks of fresh rosemary
  • 8 leaves of sage
  • 2 tablespoons poultry seasoning
  • 1 1/2 cups chicken broth (or veggie broth)
  • 3 tbsp ghee
  • 3 stalks celery (diced)
  • 4 cloves garlic (diced)
  • 10 mushrooms (chopped)
  • 1 large yellow onion (diced)
  • 2 medium sweet potatoes (peeled and diced)
  • Salt and pepper to taste


  1. Add ghee to a pan and add the onions, peppers, garlic, and celery on medium heat for about five minutes. Add the sweet potato and cook down for another 10-15 minutes, until the veggies become translucent.
  2. In a separate pan, brown sausage.
  3. Combine sausage, veggie mix, herbs, poultry seasoning, mushrooms and chicken broth and cook down for a few minutes.
  4. Put in a glass baking dish and bake at 350 F for roughly an hour, stirring at about half way. When the sweet potatoes mash up when stirred, it is done.
