Pumpkin spice is nice, but have you tried pumpkin gnocchi? This creamy dish is the ultimate fall comfort food, especially when topped with crispy, savory bits of True Story Heritage Breed Diced Uncured Pancetta.
1 package potato gnocchi
4 oz True Story Foods Heritage Breed Diced Uncured Pancetta
2 cloves garlic, minced
¾ cup pumpkin purée
½ cup chicken broth
½ cup heavy cream or half-and-half
⅓ cup grated parmesan
½ tsp dried sage or a few fresh sage leaves
¼ tsp nutmeg
Salt & black pepper
Directions
Sauté pancetta in a skillet over medium heat until crisp, then remove and set aside.
Cook the gnocchi in the rendered fat until lightly golden.
Add garlic and sage until fragrant, then stir in pumpkin, broth, and cream. Simmer until creamy, then add parmesan, nutmeg, salt, and pepper, then fold in most of the pancetta.
Finish with the remaining crispy pancetta, parmesan, and sage.
