1 package Diced Uncured Pancetta
1 cup flour (regular or gluten free)
½ tsp salt
1 ¼ cups milk, warmed slightly
4 eggs, room temperature
2 tbsp butter, melted
2 tbsp chives, minced
½ cup cheddar cheese, grated
Hot honey butter:
½ cup high quality salted butter, room temperature
1 tbsp honey, plus more for topping
1 tsp chili flakes, plus more for topping
Flaky salt, for topping
Directions
Preheat the oven to 400°. Generously grease and popover or muffin pan.
Heat a sauté pan over medium heat. Add the True Story Foods pancetta and cook until crispy, stirring regularly, about 5-7 minutes. Transfer to a paper towel towel-lined plate.
In a small bowl, whisk together the flour and salt.
In a food processor or blender, blend the eggs, milk, and butter. Add the flour mixture and blend until no lumps remain. Add the chives and pulse until combined.
Pour the batter into the greased popover or muffin pan, layering in the cooked pancetta and cheddar as you go. Bake for 25 minutes, then reduce the oven temperature to 350° and bake for another 15 minutes.
While the popovers are baking, make the hot honey butter. Blend ingredients and plate with a drizzle of honey, sprinkle of chili flakes, and sprinkle of flaky salt.
Enjoy popovers warm with a swipe of the honey butter.
