All the flavors you love in pasta carbonara…in a pizza. Use any store-bought or homemade pizza dough for a gourmet pizza night in minutes. And don’t sleep on that runny yolk!
1 tbsp extra virgin olive oil
1 package True Story Foods Heritage Breed Diced Pancetta
Flour, for dusting
1 ball pizza dough
1 ½ cups shredded mozzarella
¾ cup grated parmesan cheese, plus more for topping
1 egg + 1 egg yolk
Cracked pepper, to taste
Fresh basil leaves, for topping
Directions
Preheat oven to 450 degrees.
Preheat a small saute pan over medium heat. Add the olive oil, then the pancetta, sauteing until crispy. Transfer to a paper towel-lined plate and set aside.
Prepare your pizza dough. Sprinkle your work surface with flour, then roll the dough out with a rolling pin. Lightly sprinkle a baking sheet with flour, then transfer the dough to the sheet pan. Sprinkle on the shredded mozzarella, most of the pancetta (setting aside some for topping), then the grated parmesan cheese.
Bake for about 8 minutes. During this time, add the egg and egg yolk to a measuring cup or any container with a small pour spout. Remove pizza from the oven, and use a spoon or fork to create a small egg well in the center of the pizza by scraping the cheese outward from the center. Slowly pour the eggs into the egg well and return the pan to the oven, baking about 5 more minutes until eggs are set.
Remove from the oven and finish with cracked pepper, fresh basil leaves, some more parm, and the remaining pancetta.
