Let’s face it, eating sandwiches day in and day out can get kind of…BORING. But the fact is, sandwiches are easy to throw together, require little to no planning, and can be an extremely healthy way to get that nourishment in. In our house, we have sandwiches almost daily. In fact, my husband has eaten a sandwich every day for lunch for the past eight years. Nope, I am not exaggerating; he just loves them. However, the key to keeping things interesting for him – and for all of us – is to get creative with the fillings and using high-quality ingredients.

Today I am sharing a quick and easy recipe for my Nacho Average Chicken Sammy, made with nacho-flavored oven roasted Japanese sweet potatoes, True Story Foods Organic Oven Roasted Chicken Breast, kraut (which is great for gut health), greens, and sprouted sourdough bread (great for digestion!). Although I love all of these ingredients, if I had to pick, my favorites are the nacho sweet potatoes, because who doesn’t love that cheesy taste of nachos, and the True Story Organic Oven Roasted Chicken Breast?

My family has been a huge fan of the entire True Story Foods line for a few years now. But we ESPECIALLY love these chicken breast pieces, and it’s quite simple to see why. We pull back the seal on the package and eat the chicken pieces straight from the container. Both my 16-month-old and 3-year-old devour them in an instant, and sometimes the entire package is gone before we even get home from the grocery store. Hey, it happens. Since the chicken is already lightly seasoned, I love tossing them in my salads. And my husband? Well, you know he wants his in a sandwich.

So let’s get to it.

Nacho Average Chicken Sandwich

Servings: 2 sandwiches

Ingredients

1 large Japanese sweet potato, sliced into 1/2 inch coins

3 tbsp nutritional yeast

1 tbsp avocado oil

Salt and pepper to taste

1/2 package True Story Foods Organic Oven Roasted Chicken Breast

2 tbsp of kraut of choice (or kimchi works well)

A handful of greens (arugula, romaine, butter lettuce are all great choices)

4 slices sprouted sourdough bread (or bread of choice)

Optional: condiments of choice, such as mustard, mayo, or pesto

Instructions

Preheat oven to 375º. Line baking sheet with parchment paper. Line up sliced sweet potatoes on the baking sheet. Rub generously with the avocado oil, coating both sides, and evenly sprinkle the nutritional yeast all over the sweet potatoes. Next, add salt and pepper to taste. Roast the sweet potatoes in the oven for 20 minutes, flipping once at the 10-minute mark. Remove from the oven and set aside to cool.

Now, let’s assemble the sandwiches! Toast your bread and lay them out on a plate. On one slice of bread, add the sweet potatoes. Next, add the True Story Foods Organic Chicken Breast, followed by the greens, kraut, and last, the second piece of bread. Slice the sandwich in half and enjoy!
